Poulet de Delta
We call our finished Canadian Bresse chicken Poulet de Delta as coined by Mr. Mark Schatzker in his chicken article published in the Globe and Mail. We thought it a good idea to adopt Poulet de Delta as it helps distinguish that there is a lot of rearing, caring and hard work involved before we get the finished product from hatching the Canadian Bresse breed of chicken to raising it for the table.
The Poulet de Delta is finished as closely to the French standard as possible using milk and cereal grains as well as a few special finishing touches. New pricing coming this fall/winter season (whole bird 3 to 5.5 lbs each). Small batch artisan chicken. Giblets are not provided |

Heritage Line Collection
This collection is from our pastured heritage and rare flocks imported from all over the globe. One might either get a Bielefelder, Malines, Sulmtaler, Light Sussex, and the list goes on. Raised a minimum of 16 weeks on pasture.

Heritage Type Collection
This collection is from our heritage type chickens like the Le Grand that are faster growth. Artisanal chicken with a diet of apples, pumpkins, cereal grains and cream. Raised a minimum of 16 weeks on pasture.

Cornish Cross
We are now offering Cornish Cross. We have decided to raise these birds since some of our customers wanted another option aside from roasters that can be more of a meal size bird that can be eaten in one sitting. These are the birds known for large quantity of breast meat. The birds were vegetarian fed, they were also given wild blackberries and pears from our own trees. They were raised outside on grass, soaking in the sun and fresh air, free to roam, dust bathing in the pasture, noshing on green grass. They were 100% free of antibiotics.

Pumpkin Finished Pastured Chicken
We are the first in Canada to offer something this unique for your palate. Our goal is to make this a tradition. Seriously, who is not burnt out on factory turkey anyways? We have selected about 100 of our popular Poulet de Delta (Canadian Bresse) and added a special treat to their diet for the holidays. Pumpkins! But not just any pumpkins and not any normal diet being these are raised as closely to the French standard as possible.
The pumpkins that we raise on the farm are a late 1800's variety of French heirloom pumpkins. It is not a coincidence that our line of heritage Poulet de Delta (Canadian Bresse) are noshing on these.
